Pasta with sauteéd shrimp and fresh tomato sauce. Nothing can get more satisfying than this! Plus, it is fast and easy to prepare.

Ingredients You’ll Need:

  • 1 lb medium shrimp, peeled, deveined, and tails removed
  • 200g pasta of your choice (linguine or spaghetti is recommended)
  • 1/2 can (7 oz.) diced tomatoes, in juice
  • 1 cup cherry tomatoes, halved
  • 1 pc small white onion, finely chopped
  • a dash of dried basil leaves
  • 1 tsp garlic powder
  • pinch of salt and ground pepper
  • 6 tsp olive oil
  • 1 cup water
  • parsley leaves for garnish (optional)

Cooking Procedures:

Step 1

Season shrimp with salt and pepper. In a large skillet, heat 3 tsp olive oil over high heat. Add shrimp then cook for 3 minutes or until opaque throughout, turning occasionally. Transfer to a bowl then set aside.

Step 2

Make the sauce: To the same skillet, add the remaining 3 tsp olive oil and onions. Cook until fragrant over medium heat. Add canned tomatoes and their juice, along with a cup of water then bring to a boil. Stir in dried basil leaves and garlic powder. Reduce heat then simmer for 15 minutes or until tomatoes have softened and are saucy, stirring occasionally. Remove sauce from heat. Add cherry tomatoes then stir.

Step 3

Meanwhile, in a large pot of boiling salted water, cook pasta according to package instructions. Drain then return the pasta to the pot. Add tomato sauce, shrimp, and basil leaves. Season with salt and pepper, and toss.

Step 4

Garnish with parsley leaves, if desired. Serve immediately and enjoy your Tomato Shrimp Pasta!
