Embutido with Special Sauce Recipe

Embutido is a type of Filipino meatloaf, usually made with ground pork, but sometimes also with ground beef, ham, carrots, eggs, raisins, bell peppers, and pickles. It is usually formed into a log-shaped roll, wrapped in aluminum foil, and then steamed or boiled. Embutido is often served as an appetizer or main dish and can be served either hot or cold. It is commonly served with a sweet-sour sauce, such as tomato sauce. Embutido is also a popular dish for celebrations, such as Christmas and New Year’s, and can be found in many Filipino restaurants.

Ingredients You’ll Need:

  • 400 grams ground pork / pork kasim strips then pounded (babayuhin)
  • 2 raw eggs beaten
  • 1 onion chopped finely
  • 1/2 cup raisin
  • 4 pcs whole hotdog
  • 1 cup grated cheese
  • 2 hard-boiled eggs quartered
  • 1 cup grated carrots
  • 3 tbsp bread crumbs
  • Salt and pepper to taste
  • 1/2 cup condensed milk
  • 1 head garlic chopped finely
  • 1/2 cup green peas
  • 1 cup flour
  • 1/2 cup cornstarch
  • 1/2 cup butter
  • Parsley for garnish

For the special sauce:

  • 2 tbsp butter
  • 1/4 cup tomato paste
  • 1/4 cup pineapple juice
  • 1 tsp salt
  • 2 cups beef stock
  • 1 tbsp brown sugar


Cooking Procedures:

Step 1

In a large bowl, combine all the ingredients except for the hard-boiled eggs and hotdog.

Step 2

Mix well, until blended.

Step 3

Spread half of the mixture in an aluminum foil.

Step 4

Arrange the hotdog and hard-boiled eggs on top.

Step 5

Roll the mixture.

Step 6

Roll tightly and wrap in aluminum foil, seal both ends.

Step 7

Place the roll in a steamer for one hour. Chill.

Step 8

Remove from wrapping before serving, serve with ketchup or special sauce. Garnish with parsley. (You can also fry if you want)

To make the special sauce:

Melt the butter in a pan on medium-low heat. Add tomato paste, pineapple juice, beef stock, and salt. Stir. Cover then simmer until it boils. Add brown sugar. Stir then continue simmering until the sauce is reduced. Transfer to a bowl or drizzle on the cooked embutido.
