There’s something undeniably comforting about a steaming bowl of Chicken Macaroni Soup—known lovingly in Filipino households as sopas. With its creamy broth, tender chicken, and elbow macaroni swimming alongside colorful veggies, sopas is more than just a soup—it’s a hug in a bowl.
Ingredients You’ll Need:
- 1 cup elbow macaroni
- 1/2 lb boneless, skinless chicken breast, sliced into strips
- 1 pc small onion, thinly sliced
- 1 stalk celery, thinly sliced
- 1 pc small carrot, cut into small cubes
- 1/4 cabbage, cut into pieces (optional)
- 3 pcs hotdog, sliced (optional)
- 4 cups homemade chicken broth (or you can also use 2 pcs Knorr chicken cubes dissolved in 4 cups of hot water)
- 1/2 cup evaporated milk or all-purpose cream
- 1 tbsp cooking oil
- salt to taste
- ground black pepper to taste
Cooking Procedures:
Step 1
Heat oil in a pot over medium high heat. Sauté onions and celery until fragrant and softened, about 5 minutes.
Step 2
Add chicken and brown on all sides.
Step 3
Add carrots, cabbage, hotdogs, and chicken broth. Bring to a boil then simmer over low heat until chicken is cooked.
Step 4
Add elbow macaroni and simmer until cooked but still firm.
Step 5
Stir in milk. Add salt and ground black pepper to taste. Serve hot and enjoy your Chicken Sopas!
