Poqui Poqui is a vegetable dish that originated in the province of Ilocos. You can quickly cook this at home because it only requires easy-to-find ingredients and a simple way of cooking. The taste is close to tortang talong but it is more flavorful due to added ingredients such as tomato, onion, and garlic.
Ingredients:
- 4 pcs large eggplant
- 2 pcs tomato, chopped
- 3 cloves garlic, minced
- 1 pc medium onion, sliced
- 4 egg
- 1/4 cup spring onion, chopped (optional)
- 2 tbsp cooking oil
- salt, to taste
- pepper, to taste
Cooking Procedures:
Step 1
Grill the eggplant and peel off its skin. Cut into serving pieces. Set aside.
Step 2
Heat cooking oil in a pan. Add garlic and onion. Sauté until fragrant.
Step 3
Add the tomatoes. Season with salt and pepper. Stir and cook until tomatoes are soft.
Step 4
Add the grilled eggplant. Stir and slightly mash the eggplant.
Step 5
Add the eggs. Stir until the egg is cooked. Turn off the heat when done.
Step 6
Transfer to a serving plate. Top with spring onions if desired.
Step 7
Serve and enjoy your Poqui Poqui!
