Pancit Molo or Molo Soup got its name because it originated from the Molo district of Iloilo City. It is basically the Pinoy version of Chinese wonton soup. A comforting and very tasty soup composed of pork dumplings cooked in flavorful chicken broth.
Ingredients You’ll Need:
For the dumplings:
- 250 g ground pork
- 200 g shrimps, peeled and minced
- 1 clove garlic, minced
- 1 pc onion, minced
- ΒΌ tsp ground black pepper
- 1 tsp salt
- 24 pcs small wonton wrappers
For the soup:
- 6 cups chicken broth (you can also use 3 Knorr chicken broth cubes dissolved in 6 cups of water)
- 3 pcs onion, thinly sliced
- 4 cloves garlic, crushed
- 1/4 cup green onions, chopped
- fish sauce, to taste
- ground black pepper, to taste
- fried minced onion, for toppings
Cooking Procedures:
Step 1
To make the dumplings, mix together all the dumplings ingredients (except the wonton wrappers) in a mixing bowl. Place half a teaspoonful of the mixture at the center of a wonton wrapper, gather the edges together and press the edges to seal. Repeat until all the wrappers have been filled.
Step 2
In a pot, boil the chicken broth, sliced shallots, and crushed garlic. Season with fish sauce as needed, and stir in the pepper. Allow boiling gently in medium heat for 5 minutes.
Step 3
Drop in the dumplings one by one.
Step 4
When the broth comes to a boil, adjust the heat to low, cover the pot and cook the dumplings for about 7 minutes.
Step 5
Taste the soup. Adjust the seasonings if needed. Turn off the heat.
Step 6
Serve in bowls. Garnish with chopped greens onions and fried minced shallots. Enjoy your molo soup!
