Ingredients You’ll Need:
- 1 lb jumbo shrimp, peeled and deveined (leave tails on)
- ⅓ cup cornstarch
- 1 tsp salt
- 1 cup all-purpose flour
- 1 large egg
- 1 cup ice cold water
- Oil for frying (vegetable or canola)
Cooking Procedures:
Step 1
Make sure the shrimp is peeled and deveined, leaving the tails intact. Make 4–5 small notches on the belly side to prevent curling.
Step 2
Toss shrimp in cornstarch and salt.

Make a batter by whisking the egg with cold water in a bowl. Add flour and gently whisk until just combined. Don’t overmix—lumps are okay!
Step 4
Heat oil in a deep skillet or pot to 350°F (175°C). Dip each shrimp into the batter and fry in small batches for 2–3 minutes until golden and crispy. Drain on paper towels.
Step 5
Serve with the sauce of your choice! It could be soy sauce, tempura dipping sauce, or sweet chili sauce.
