Here is a super easy shrimp tempura recipe you can cook at home in under 30 minutes!

Ingredients You’ll Need:

  • 1 lb jumbo shrimp, peeled and deveined (leave tails on)
  • ⅓ cup cornstarch
  • 1 tsp salt
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 cup ice cold water
  • Oil for frying (vegetable or canola)

    Cooking Procedures:

    Step 1

Make sure the shrimp is peeled and deveined, leaving the tails intact. Make 4–5 small notches on the belly side to prevent curling.

    Step 2

Toss shrimp in cornstarch and salt.

    Step 3

Make a batter by whisking the egg with cold water in a bowl. Add flour and gently whisk until just combined. Don’t overmix—lumps are okay!

    Step 4

Heat oil in a deep skillet or pot to 350°F (175°C). Dip each shrimp into the batter and fry in small batches for 2–3 minutes until golden and crispy. Drain on paper towels.

    Step 5

Serve with the sauce of your choice! It could be soy sauce, tempura dipping sauce, or sweet chili sauce.

💡 Tips to make sure your tempura is crispy:

    • Use ice-cold water for the batter to reduce oil absorption.
    • Fry in small batches to maintain oil temperature.
    • Make the batter right before frying to keep it light and airy.
    • Want to add a Filipino twist? Try seasoning the shrimp with a splash of calamansi juice before battering for a subtle citrus zing.
