This pork adobo recipe is rich and full of flavor. The ingredients will give you a balance of sourness and saltiness that you will surely love. Make sure to have some extra rice ready!

Ingredients You’ll Need:

  • 1 ½ lb pork, cut into cubes
  • 5 cloves garlic, minced
  • 1 pc big onion, chopped
  • 3 pcs bay leaves
  • 10-12 pcs whole peppercorn
  • 1 tsp brown sugar, optional
  • ⅓ cup soy sauce
  • ½ cup vinegar
  • 1 cup water
  • 2 tbsp cooking oil


Cooking Instructions:

Step 1

In a pot over high heat, put the cubed pork. Add the water, soy sauce, vinegar, peppercorn, bay leaves, onion, and brown sugar. Bring to a boil.

Step 2

Adjust the heat to low and cover the pot with the lid. Simmer for about an hour or until the pork is tender and the liquid is reduced to half.

Step 3

Separate meat from the sauce. Set aside both.

Step 4

In a deep pan over medium fire, heat cooking oil. Add the minced garlic. Sauté garlic until fragrant. Remove some of the garlic from the oil then put it in a small bowl. Leaving about ½ amount of the garlic in the pan.

Step 5

Add the meat to the pan and cook for about 2 minutes. Add the adobo sauce and let it simmer until it is reduced some more and becomes thicker.

Step 6

Transfer the pork adobo to a serving dish and top it with the sautéed garlic.

Step 7

Serve with steamed white rice and enjoy your Pinoy Pork Adobo!
