Palitaw sa Latik is a sweet, chewy Filipino treat made from glutinous rice flour and coconut milk.

Ingredients You’ll Need:

  • For the Palitaw:
    • 2 cups glutinous rice flour
    • ¾ cup water
  • For the Latik:
    • 1 cup coconut cream
  • For the Sauce:
    • 2 cups thin coconut milk
    • 1 cup brown sugar
    • ½ teaspoon salt
    • Optional: ripe jackfruit and pandan leaves for added flavor


Cooking Procedures:

Step 1 (Prepare the Palitaw)

  • Mix glutinous rice flour with water to form a dough.
  • Shape the dough into small balls and flatten them.
  • Boil the flattened dough pieces until they float to the surface, then set aside.

Step 2 (Make the Latik)

  • Heat coconut cream in a pan over low heat.
  • Stir continuously until the cream curdles and turns golden brown. Strain and set aside.

Step 3 (Cook the Sauce)

  • Combine coconut milk, brown sugar, and salt in a pan. Heat until the sugar dissolves.
  • Add the boiled palitaw and simmer until the sauce thickens.
  • Mix in the latik, jackfruit, and pandan leaves for extra aroma and flavor.

Step 4 (Serve)

  • Plate the palitaw with the sauce and latik. Enjoy!
