Palitaw sa Latik is a sweet, chewy Filipino treat made from glutinous rice flour and coconut milk.
Ingredients You’ll Need:
- For the Palitaw:
- 2 cups glutinous rice flour
- ¾ cup water
- For the Latik:
- 1 cup coconut cream
- For the Sauce:
- 2 cups thin coconut milk
- 1 cup brown sugar
- ½ teaspoon salt
- Optional: ripe jackfruit and pandan leaves for added flavor
Cooking Procedures:
Step 1 (Prepare the Palitaw)
- Mix glutinous rice flour with water to form a dough.
- Shape the dough into small balls and flatten them.
- Boil the flattened dough pieces until they float to the surface, then set aside.
Step 2 (Make the Latik)
- Heat coconut cream in a pan over low heat.
- Stir continuously until the cream curdles and turns golden brown. Strain and set aside.
Step 3 (Cook the Sauce)
- Combine coconut milk, brown sugar, and salt in a pan. Heat until the sugar dissolves.
- Add the boiled palitaw and simmer until the sauce thickens.
- Mix in the latik, jackfruit, and pandan leaves for extra aroma and flavor.
Step 4 (Serve)
- Plate the palitaw with the sauce and latik. Enjoy!
