Ginataang Halo Halo (also called Binignit in Visayan) is rich in flavor and so creamy. It is a popular Filipino snack that contains sweet potato, plantains, sago, glutinous rice balls, and coconut milk. It is best served while newly cooked and a bit hot.
Ingredients:
- 1 cup glutinous rice flour
- 2 pcs large sweet potatoes (kamote), peeled and cubed
- 2 pcs plantains (saba bananas), peeled and cubed
- 1 cup cooked sago
- 1 cup jackfruit strips
- 5 cups coconut milk
- 1 cup coconut cream
- 2 1/2 cups water
- 1 cup sugar
Cooking Procedures:
Step 1
In a small bowl, put the glutinous rice flour and 1/2 cup of water. Mix well and knead the mixture with your clean hands until it turns into a pliable dough. If the dough is too sticky, add a little bit more flour; if too dry, add a little bit more water.
Step 2
Form the dough into balls using the palm of your hands. The shape should be like big-sized marbles. Arrange the balls in a tray or plate then cover with a cloth until ready to use.
Step 3
In a pot over medium heat, put the coconut milk and the remaining 2 cups of water. Stir. Simmer for 2-3 minutes.
Step 4
Add the sweet potato then cook for about 3-5 minutes or until slightly tender.
Step 5
Add the banana, cooked sago, and jackfruit strips. Cook for 3 minutes.
Step 6
Add the glutinous rice balls then cook until they start to float on top.
Step 7
Add the sugar. Stir well.
Step 8
Add the coconut cream. Stir. Continue to cook until bananas and sweet potatoes are tender but not saggy and the ginataan thickens to your preferred consistency.
Step 9
Serve and enjoy your ginataang halo halo!
